[Guest Post] BBQ Bliss – NuVal and the Grill

Barbecue Bliss!
One of my favorite parts of summer would have to be outdoor cooking. Ok, to be honest, it is outdoor EATING. In either case, the grill is the star of the show. There’s nothing like the sizzle and scent of the coals doing the cooking. When the temps are soaring, it is great to keep the heat out of the kitchen. Plus, clean-up is a breeze!
What is your favorite item to toss on the barbecue? Is your grill only used for hot dogs? Or do you get a little more creative? Do you consider yourself a “grill master?” I lived in Memphis for a time and grew to truly appreciate the finesse required to create a barbecued masterpiece. The folks down there take their grillin’ very seriously. They have contests with trophies, titles and large cash prizes. They spend days smoking and grilling meats to perfection. While I do love a saucy BBQ rib or a tangy pulled pork sandwich, I know my waistline doesn’t need to indulge in those too often. So, I’ve come up with some healthier alternatives for our grill. Using the NuVal scores at Coborn’s to help select ingredients for the barbecue is a simple way to make small changes that can have big impact on your health.
One meal that is a regular request at our house is Fajitas. They are so easy to prepare and a great way to clean out the freezer. Just grill up a chicken breast (NuVal 39) or a sirloin steak (NuVal 30) or a few shrimp (NuVal 75). If you’re feeling daring and want to go for a mixed fajita of all three, your Coborn’s meat counter clerk will be happy to wrap up some of each for you. Then hit the produce section! We like to cut up a big bell pepper (NuVal 96) and a yellow onion (NuVal 93) and toss them with a little canola oil. Grill them in a pan until they sizzle and begin to caramelize. Just add a few of your other fajita favorites, like Full Circle canned black beans (NuVal 82) and Food Club Corn and Black Bean Salsa (NuVal 35). Wrap all of that grilled goodness in a LaBanderita High Fiber Flour Tortilla (NuVal 35) and you’ve got a fiesta on a plate!
